Breakfast Greens

This is a delicious way to frontload your day with dark leafy greens. To bulk it up for a crowd try adding potatoes, artichokes, or feta!

Serves 2

Ingredients

  • ½ bunch parsley
  • 1 bunch cilantro
  • 1 clove garlic
  • zest of 1 lemon
  • 1 serrano pepper
  • ½ tsp cardamom
  • 1 tsp cumin
  • 2 tsp coriander
  • 2 tsp Criolla Sella Salt
  • ½ cup olive oil
  • 16 oz mixed hardy greens, washed & rough chopped
  • poached eggs & sourdough to serve

White plate with wilted greens and poached eggs, set on a wooden table with a blue napkin nearby and a fork overhead.

Instructions

In a powerful blender, combine all ingredients except the hardy greens. Blend on high until the mixture is smooth.

In a large pan over medium heat, add a splash of olive oil. When the oil is shimmering, add your hardy greens. Cover and allow to wilt for 1-2 minutes. While the greens are wilting, poach your eggs & toast your bread.

Uncover and add your herb mixture. Stir to combine and season to taste with salt & pepper. To serve, nest eggs gently in the greens.

Alternatively you can cook your eggs directly in the greens as you would with shakshuka.
