Grilled Zucchini Boats

Some of the best summer cooking is the simplest. Chef Viridiana’s grilled zucchini boats come together fast — stuffed, charred, and we like it served over rice with fresh herbs and a wedge of lemon. Farm-to-grill doesn’t get much better than this.

Ingredients

  • 1 lb ground lamb
  • ½ yellow onion, diced
  • 1 clove garlic, minced
  • ⅛ cup pinenuts, chopped
  • 5 dried apricots, chopped
  • ½ cup crumbled feta
  • 2 sprigs mint leaves, chopped, plus more for garnish
  • 1 Tbsp Carnation Farms Fennel Salt
  • Zest and juice of 1 lemon
  • 1 egg
  • ½ cup panko
  • 4 medium sized zucchini, cut in half and scooped
  • Salt & pepper to taste

Instructions

Prepare your grill and get it nice and hot. In a medium bowl, combine all ingredients except the lemon juice zucchini halves. Mix well to combine and set aside. Generously season the zucchini halves with salt & pepper. Stuff the ground lamb into the zucchini halves, pressing in well so the meat is about level with the zucchini. Brush some olive oil onto the lamb side of the zucchini to help prevent them sticking to the grill.

When your grill is ready, put the zucchini halves on, lamb side down. Brush some olive oil onto the zucchini side while the meat grills. Cook for 6 minutes and then carefully flip with a spatula, loosening the meat from the grill before flipping. Grill for another 4-5 minutes. Remove from grill. Before serving drizzle lemon juice on top, garnish with flaky sea salt and extra mint and feta if desired.
